Bioaccessibility

The fraction of a substance, such as a nutrient or contaminant, that is released from its matrix and becomes available for absorption by a biological system following ingestion or exposure. This is often assessed through in vitro digestion models that simulate physiological conditions. It is a measure of the potential for a substance to exert a biological effect.
