Interfacial tension

The force per unit length existing at the interface between two immiscible fluids, such as oil and water. It represents the energy required to create a new interface between the fluids. Lowering interfacial tension, often through the use of surfactants, is a key mechanism in chemical enhanced oil recovery to mobilize trapped oil.
