The SI unit of catalytic activity, defined as the amount of enzyme that catalyzes the conversion of one mole of substrate per second under specified assay conditions. It is used in clinical chemistry and enzymology to express the quantity of an enzyme in a sample. One katal (kat) is equivalent to 60 million International Units (IU), an older, non-SI unit.
