Mutarotation

The change in the optical rotation of a solution of an anomeric sugar as the anomers interconvert to reach an equilibrium mixture. This phenomenon occurs when cyclic sugars are dissolved in a solvent, allowing the alpha and beta anomers to interconvert through an open-chain aldehyde or ketone intermediate. The equilibrium mixture has a characteristic optical rotation.
