Fermentation

A metabolic process in which an organism converts a carbohydrate, such as sugar or starch, into an alcohol or an acid. This biochemical transformation occurs in the absence of oxygen, releasing energy for the organism. Yeast fermentation, for example, converts glucose into ethanol and carbon dioxide.
