Osazones

Derivatives of sugars formed by the reaction of an aldose or ketose with an excess of phenylhydrazine, resulting in the formation of two hydrazone groups at the C-1 and C-2 positions. These crystalline compounds were historically used for the identification and characterization of sugars due to their distinct melting points and crystal shapes. Glucose and fructose form the same osazone.
